To be honest I’m really not one to eat a meat-fruit combo (ea. Hawaiian pizza, fish tacos with mango salsa) but this salad has started to question if I have been being weird all my life 🙂

Note:. I love a big salad, but my husband always tells me I make more than he can eat, so may feed 2 people 😉 

I mixed some inexpensive lettuce with kale to make it more nutrient dense. Add some pre-cooked leftover chicken (I made quesadillas for the kids!).

Chop 1/2 your favorite apple into bite size pieces- the kids and I love Gala apples! Add a handful of roughly chopped pecans.

Top with Feta cheese. Personally I like just enough to give the dish a little flavor, but not so much that it’s in every bite. But feel free to add more!

Mix up the vinaigrette, drizzle on top, and add any fresh herbs you have any on hand (optional, but I used some chives that needed to be eaten!). My husband bought me a glass bowl set and I use it all the time!

Recipe: Chicken Apple Pecan Feta with an Easy Vinaigrette

Salad:
1 cup of chopped lettuce
handful of chopped kale
1 small cooked, cold chicken breast
1/2 Gala apple, cut into bite sized pieces
handful of pecans, roughly chopped
2 tBs of Feta cheese
chives, optional

Add ingredients to a large plate or bowl.

Easy Vinaigrette:
1 tBs olive oil
1/2 tBs of honey
1 teas of apple cider vinegar
dash of salt & pepper

Mix in a small bowl with fork and drizzle on salad. Enjoy!
