To a mixing bowl add yeast, honey, and warm water. Wait until it starts bubbling before next step (approx. 5-10 minutes).
Add oil, salt, and 2 cups of flour. Mix, and gradually add more flour until a dough ball forms. You should be able to touch the dough without it sticking to your hand.
Knead for an additional 2-3 minutes. If the dough starts to stick to the sides, it needs more flour, just a tablespoon at a time.
Cover with towel and let it rest in a warm, or draft free place. Dough should rise and be doubled within 2 hours. It will take longer to rise in cold conditions.
