I got a happy surprise yesterday while making enchiladas for dinner tonight!
I was able to make a few extra enchiladas beyond what was able to fit in my pan; I tucked these extras into a freezer gallon bag, labeled them burritos and added to the freezer!
An unexpected addition to the freezer, but will make a great lunch option in the future! The filling of the enchiladas were cooked, they simply need to be reheated from the freezer.
