Homemade Flaky Buttermilk Biscuits

My family loves biscuits and gravy. It’s one of my husband’s top breakfast meals and the kids barely talk during a biscuit and gravy breakfast! These homemade flaky buttermilk biscuits use basic baking ingredients and only take about 10 minutes from start to popping them into the oven.

Now, I used to be intimidated with baking anything bread-wise; biscuits can seem tricky but they aren’t! I’ve found a few tricks that I use and they always come out fluffy and delicious.

Trick number one is you don’t have to buy buttermilk at the store. I never end up using it all, then it stinks up the fridge and then feel like I’m pouring money down the drain when I finally decide to throw it out. I do the milk and vinegar trick. I do that and let it sit on the counter while I mix and roll the dough out. I have also used just plain milk and the biscuits still come out nice. The choice is yours.

Trick two is keeping everything as cold as possible. I start the oven first so as soon as the biscuits are ready to go in, in they go. I don’t take the butter out of the fridge until I’m ready to cut it in. And if you planned ahead and know that you are baking homemade biscuits you can measure out your flour and set it in the fridge beforehand (the cold flour helps keep the butter cold while you are working with the dough) which helps with creating the butter pockets that expand the biscuits when it hits the hot oven.

Trick three is to take the time to roll it out right! The dough will still be sticky when you pour the dough onto the counter, but you just need to sprinkle some flour on top and more on your rolling pin (if needed). Roll it out, fold in the thirds, roll it out again, and fold in thirds, and roll it out. These buttermilk biscuits are easy, I promise!

Trick four is when you are taking your cookie cutter (I’m using a pasta cutter) press down then lift straight up! Don’t press and twist. When you twist it, it seems to seal the sides and they won’t raise as much.

Prep Time: 10 minutes
Bake time: 10- 15 minutes

Recipe:

2 cups of flour (I usually use all purpose)
1 tBs baking powder
1 tBs sugar
1/4 teas baking soda
1 teas salt
6 tBs cold butter, cubed
1 cup of buttermilk

Directions:

  • Preheat oven to 450 degrees
  • In a large bowl add flour, baking powder, baking soda, salt, and sugar. Mix up.
  • Using a fork or pastry cutter cut the butter into flour mixture until the size of small peas.
  • Make a well in mixture and add in the buttermilk. Mix until combined.
  • Pour out onto a floured surface . Roll out, fold into thirds and repeat.
  • Use a round cookie cutter or cup to cut out biscuits. Press down and pull up. Don’t twist.
  • Place on cookie sheet and bake 10-15 minutes. Watch carefully around 10 minutes. Take out when golden brown.
