One Pot Roasted Red Pepper and Sausage Pasta

Today I have a new take on pasta night! I was pleasantly surprised when I made this the first time that it was a hit with everyone, the kids even had seconds! Every mom’s meal planning dream come true, haha! It takes one pot, 7 ingredients, and less than 30 minutes to get this roasted red pepper and sausage pasta to the table! My kids always rave when I serve it with homemade bread.

I use the dutch oven my husband bought me for Christmas, but a large pot will work great too. Start by browning the sausage in a little olive oil. While the sausage is cooking, chop some spinach (kale works great too!) and puree your roasted red peppers. Add both to the pot when sausage is cooked through. Pour in liquids and bring to a soft boil, then add noodles. Cover and cook until noodles are done to your preference. Garnish with parmesan, serve with salad and/or bread, done!

One Pot Roasted Red Pepper and Sausage Pasta

Serves: 6-8

1 tBs olive oil
1/2 lb Italian sausage
1 cup of chopped spinach (or kale)
1 12oz jar of roasted red peppers with garlic, pureed in blender (or 3/4 c. of  homemade)
2 cups chicken stock
1 cup of milk
1 16oz. box of penne pasta
parmesan cheese to garnish, optional

Heat dutch oven or large pot over medium heat. Drizzle olive oil and add sausage, cook until done. While the sausage is cooking add the jar of roasted red peppers to your blender and blend until smooth. Add spinach and roasted red pepper puree to the pot when sausage is cooking. Stir together and add chicken stock and milk. Heat until it reaches a soft boil add in the box of pasta. Stir together to combine then turn heat to medium low heat and cover. Stir and check every few minutes. Done when pasta is done to your preference (10-12 minutes). Serve and with parmesan cheese.
