One of our favorite things about Fall is apple picking! The orchard we have went to for years closed this year, but I was able to find some Cortland apples. It’s not nearly enough to stock up for the winter, but we are enjoying one of my children’s favorite snacks: Apple Nachos!
It’s a simple “recipe.”
Slice your favorite apple thinly, or use an apple corer/slicer.
I find it easy to just set it up on a big, serving platter. Drizzle peanut butter or almond butter (for protein). If your peanut butter is thick, you may need to heat it up just as enough to drizzle.
We really love shredded coconut flakes on our apple nachos. It adds a little crunch and natural sweetness.
Top with more chopped nuts and chocolate chips (mini’s are more fun!).
That’s it!!
If you want to pack this in a lunchbox — soak the apples in a little lemon juice water for a few minutes before assembling. The lemon will help keep the apples from turning brown.
