February Challenge: Freezer Cooking Week 4

Oh March, we are ready for you! The weather has hit 50 degrees the last few days and gosh, we’ve enjoyed it! I’ll be honest and say I’m glad the freezer cooking us up I was getting a little burnt out. This week I skipped some days and doubled up on others; it all evened out 😉

Have you tried Mississippi Roast? Although I don’t make it exactly like Pinterest says {I only use ranch packet, 3-4 tBs butter, and pepperoncini peppers} I am still surprised ALL the kids love it! I made it last week with the means to toss the leftovers in the freezer instead of the fridge but I didn’t. Instead I used it on pizza night this weekend -so.good.! I did save the broth into a small mason jar and tucked that into the freezer which will can be used to flavor beef and noodles, pot roast, to cook rice – really any dish to add some flavor!

I made more chocolate balls (AKA energy balls)! The kids enjoyed the double batch I made so much that it lasted barely a week! I think this batch will end up lasting a little longer since they got their fill already!

I attempted to make a double batch of sourdough pancakes, but only a few made it into the fridge instead; not enough for another breakfast all on its own. This is still on my list to get done. Everyone enjoys peanut butter pancake “tacos” from the freezer.

Although I didn’t do a lot of lasagna, or casseroles, or crockpot meals this month I lots of ‘components’ to make a variety of meals – breakfast, lunch, and/or dinner. As a recap include – muffins, baked oatmeal, energy balls, banana bread, pizza dough, beans, red pepper sauce, frozen fruit, chicken, and cooked ground beef all of which and more are still in the freezer. I also have other meat, frozen veggies, homemade jam, homemade applesauce, frozen fruit and other misc things in the freezer too!

I’m taking the weekend off to get things around for this March’s Challenge which is all things organizing- 2017 paperwork, declutter that junk drawer, rotate out kids clothes, etc! I hope you’ll join me!
