February Challenge: Freezer Cooking Week Two

Halfway through the Fill Your Freezer February Challenge! This week wasn’t as productive as the first as far as the quantity added to the freezer, but progress was made!.

Day 8: Since yesterday  was grocery day I spent most of my free kitchen time cutting veggies, making hard boiled eggs, and other kitchen day things. I also started yogurt for the first time using my instant pot. (Which has been on my “food to try and make” for years!)

Day 9: Yogurt worked! I can’t believe how simple it was!! I still need to make granola, but I made yogurt!! — that’s one of the those things I keep wanting to try but was too scared. Silly really, how easy it was! My Instant Pot did all the hard work by getting the milk up to temperature!! The only thing to make it to the freezer was some over-ripe bananas to make smoothies this week!

Day 10: I took today off. Hubby has been away at work for 13 days and I didn’t need to pressure myself into working in the kitchen more than necessary. I read, we watched movies, played with the kids – the good life!

Day 11: I still had leftover parsley in the fridge and some boneless chicken breast, so I whipped up the heroine chicken marinate again (using chicken breast this time) and put it in a gallon bag for an easy dinner later!

Day 12: It’s been months and on the kids’ request I made a big batch bean burritos- some for dinner and added some to the freezer!

Day 13: Fat bombs! Everyone in my house loves these! It’s a sweet treat, but also high in healthy fats (which is needed for brain health!). These are made with coconut oil, almond butter, shredded coconut, almonds, a little bit of maple syrup. These resuable silicone muffin tins are so handy – they peel right out after they freeze and then I use a wide mouth jar to stack them up in!

Day 14: Prepped meat for the freezer.  I made some chicken breast in the instant pot and shredded. And also cooked up a package of ground beef and split up – used some for dinner and 2 portions for the freezer.
