For the last few years I’ve used February as a month where I purposely cook a little more, but only on items that I already know our family enjoys eating! I fill our freezer with full meals, components of a meal, or snacks that we can enjoy over the coming weeks and months. Today: Chicken Broth!
Focusing on filling the freezer during February not only get me a stockpile in the freezer but also allows me to refill and add more over the next few months without takes large chunks of time specifically focus on it. I can fill in one or two items as things get low. I’m also constantly going through certain things, like chicken broth!
Homemade Chicken Broth
I have a whole post dedicated to making bone broth, but since I was out of vegetables scraps I just went with making a quick chicken broth. I still added the 3 ‘secret ingredients’ from my bone broth recipe (click here to read see what they are!), chicken bones, water, salt, and some parsley. Cooked in the instant pot for an hour!
This made the equivalent of 3 cartons of chicken broth you would buy at the grocery store, saving around $10, using chicken bones that would have been otherwise thrown away! And since I use chicken broth pretty much weekly – in soups, to cook rice instead of water, etc- it makes sense to add it to my freezer cooking to do list! If you don’t have time, or enough bones/vegetable scraps you can just add the bones to a freezer gallon bag until you have enough to make your own!
