Fill Your Freezer: February 3

I’m glad to announce today was definitely better than yesterday! I was able to “catch up” on my own Fill Your Freezer February Challenge! The french toast bake (some call it a casserole) was delicious and I was able to get one pan into the freezer. I used this recipe.

Batch Cooking

Those beans I soaked yesterday? I turned into a extra large pot of chili.
Kitchen Fail: I attempted to use the slow cook function on my 8 qt Instant Pot, but apparently I did something wrong; it didn’t fully cook. I ended up having to pressure cook it so we could eat dinner.

We ate our fill for dinner and I put the leftovers into a freezable container (currently 15% off). I like to let the food completely cool in the fridge before moving into the freezer (the next morning).

Doubling Saves Time

Last night when I soaked my beans?! – hint: I soaked extra! I added what I needed to the chili and then cooked the rest! I simple added some salt and pressure cooked. It was barely an extra step to drain and put into a container along side the chili in the fridge.

What do I do with cooked beans? Most often they get added to nachos! Super quick dinner to whip up and even easier when all the major components are pre cooked and in the freezer!
