Today I made Pulled Pork to fill my freezer!
It takes a few minutes to prep, but then it cooks slow and low in the oven and ends up being perfect tender and multiple ways to use it!
Of course I doubled it! One for dinner and one to freezer. Doing things this way while trying to fill your freezer is a big time saver and sanity saver since there isn’t “extra” work – in the sense of having to set aside specific ingredients or extra time throughout our busy days.
I took the (defrosted) pork roasts and cut them into large sections. It helps the meat cook faster. I sprinkled it with this rub I picked up a Costco (great on burgers too!). I seared the meat in 3 batched in avocado oil in my dutch oven just until browned on each side.
After taking out the last batch I carefully poured about 1 cup of broth into the bottom of my pan and scraped the flavored bits up. I then added the meat back in, trying to layer it evenly, placed the lid on and put it in my oven.
I bake at 300 degrees F for approximately 3 hours. I take it out to check on it. Mine is usually done at this point because I cut my roasts down so they will cook faster and evenly- so I will shred , replace the lid and put back into the oven, but turn the oven off (if it is cooked and close to dinner).
This is a great weekend dinner – start it after lunch and let it cook all afternoon!
