If I would have known that I would have taken more details photos, but I wanted to get this super easy and quick Chicken Lemon Orzo Soup recipe up for you ASAP so you can add it your menu plan, save it to Pinterest or print it!
This is a great meal to serve on a day you don’t have much time after shuffling kids place to place or like me spending a productive day rearranging, cleaning etc but then I realized time just slipped away from me. Sometime I hate when that happens, having a meal plan helps combat the stress of a time constraint, but I always have something on that list that can come together quickly!
This Chicken Lemon Orzo Soup recipe is 5 real, whole food ingredients plus 3 seasonings that I’m sure you have in your spice drawer! This soup has a bright flavor of lemon juice, the orzo to make it feel comforting, quick prep if using a rotisserie chicken, and the spinach (we love using kale too!) for color and extra nutrients. I also mentioned I added some riced cauliflower to my bowl of soup, the kids opted out even though they do like riced cauliflower- they just didn’t think it belonged in soup ๐
If I don’t have fresh lemons on hand, I use the bottles of lemon juice from Costco. You get 2 large bottles for around 7.99 and is pure juice from lemons juice, no other added ingredients.
If you have never cooked with orzo, it looks like rice but it cooks like a noodles so you can overcook it… ask me how I know that ๐
Serve with crusty bread or homemade buttermilk biscuits.
The great thing about a bright flavored soup like this one is the fact it’s light enough that you can carry it over into spring as the weather gets warmer!

Lemon Chicken Orzo Soup

Ingredients
- 6 cups Chicken Broth
- 2 cups water
- 2 cups rotisserie chicken, chopped
- 2 cups chopped spinach or kale!
- 1/4 cup fresh lemon juice
- 2 teas garlic powder or to taste
- salt and pepper to taste
- 2 cups orzo
Instructions
- Heat all ingredients execpt orzo up to a simmer. Add orzo, cooking according to directions (7-10 minutes). Taste test and adjust your preference: salt, pepper, and lemon flavor. Serve with crusty bread!
