These monthly challenges were created to help me actually achieve my Goals /New Years Resolutions for 2018. Fill Your Freezer helps me stay in our grocery budget, keeps us from the drive through, and as we all know, healthier! Not only am I teaching my kids to cook but I’m jumping in and learning things I’ve been too scared to try and finding new foods that we enjoy. I hope this encourages you as much as it keeps me motivated!
Day 1: Started making my list of things I knew I wanted to make for the freezer. (grab the FREE printable). Made a double batch of banana bread and also Ritz cracker and almond butter ‘sandwiches.’ They are not only super good {salty, sweet and crunchy!} straight from the freezer, they’re also way less messy to eat when given to the kids!
Day 2: I took out everything out of my fridge and small freezer. Wiped them down, checked everything for expiration dates and freezer burnt and reorganized as I put away. Made double batch of baked oatmeal. baking notes : I use coconut oil instead of butter, flax substitute for egg, and 1/2 the sugar for make it a healthier breakfast option!
Day 3: I tripled my pizza dough recipe. Separated into 3 balls, two went into the freezer before it sat to rise. I used the other one for dinner.
Day 4: The kids had requested Red Pepper and Sausage Pasta for dinner this week. I made a batch of Roasted Red Pepper Sauce, I used half (about 3/4 cup) for the recipe and froze the other half.
Day 5: Baked 2 loaves of Apple Cinnamon Bread, double batch of buttermilk biscuits (froze before baking), and a jar of leftover soup from dinner.
Day 6: My sourdough starter worked! We enjoyed pancakes for breakfast, although none for the freezer, yet! I made a batch of Oatmeal Chocolate Chip Cookies – I used a tablespoon to measure them out and it made 36 to freeze and we baked a few to enjoy with our lunch! I made Heroine Chicken for dinner and it was such a hit! I didn’t get much in the freezer, but I saved the bones to make stock later on.
Day 7: Grocery Day. Nothing made it to the freezer.
As you can see I don’t take huge chunks of time and dedicate 4 hours just to fill the freezer. I usually incorporate whatever I am making into one of our meals for that day. I also let my kids help in the kitchen. They won’t learn unless we teach them – there are more messes, it takes way longer, and some days it’s just frustrating, but completely worth it!
