I’m a little sad this year’s Fill Your Freezer February has come to a close! If you want to see all over this year and past years posts, click HERE .

I had a technically glitch with Friday’s post, so I decided to combine these last few days!

Peach Jam

In recent years I have been trying to buy seasonal fruits and vegetables in bulk locally. I either cook, can, or freeze those items.

Fruit is super easy to eat fresh and freeze the extras. During the winter months I can make muffins, smoothies, or like I did this weekend – make jam!

I added a gallon sized bag of peaches, one Tablespoon of Vanilla, and about 3/4 cup of sugar and cooked/simmered down until thickened.

There is nothing like the smell of summer when there is snow on the ground. I’m learning the ease and comfort when eating with the seasons, but the beauty of having a stocked pantry and freezer means you get the fresh taste of summer without sacrificing the grocery store prices.

Lasagna

Would it be freezer cooking without some kind of spaghetti/baked ziti/lasagna dish?

We limit our dairy consumption due to health reasons, but there is nothing like a good lasagna when the mood strike, need I say more?

Turkey Breast

I buy turkey or ham in bulk from Costco and then cut it up myself. Not only is it by far cheaper than the deli counter, but I can use it many different ways, and freeze the extra.

Some of this we ate as a “thanksgiving” dinner, made paninis for lunch another day, and had extra to freeze.

So, how did your freezer cooking challenge go? I am excited to see my freezer fill up a bit. I hope I was able to share a new idea, inspire you to try freezer cooking, and help give a real life peak into how I actually make time for it.
