I am super excited for this year’s Fill Your Freezer February Challenge albiet a little late getting started this month due to snow storms here in Indiana!. This year lines up perfectly for me, because baby number 6 is due at the beginning of April! So, I will be specifically focused on freezer cooking on items that will help my life be a little easier when I’m consumed with baby snuggles!

Fill Your Freezer February 2021
I started out with good intentions yesterday. It slowly went downhill- bad attitudes during homeschool, baby blow out, broken phone- it ended with me taking a bath, crying and going to bed. What does this have to do with freezer cooking you ask? Having a Monday-iest Monday would have been the perfect example on WHY having a well stocked freezer full of meals would have been helpful on a like yesterday!
(more…)2020 Fill Your Freezer February
After a health scare last month with someone in our family, which in turn ER visit, a rare disease diagnosis called Eosinophilic Esophogitis. Which is a food/environmental allergy that goes undetected by the usually allergy signs (rashes, hives, anaphylaxis) it is a chronic inflammation in your body that manifests in your throat and can cause you eating and swallowing issues. How we found out: a food impaction!
All that to say, Fill Your Freezer February this year will be a little different. We are still on the elimination diet to help figure out what food(s) are causing a reaction. So we are currently NOT eating: nuts, eggs, dairy, gluten, soy and fish. Which I guess means, this should be a really health freezer prep! So although lasagna, pesto chicken, homemade pizza dough, and banana bread are all great ideas to stock the freezer up- you won’t be seeing that in these Fill Your Freezer February posts!

About three or four years ago I found myself purposefully doing freezer cooking in the month of February. I started it because I realized we had a habitual cycle of to getting take out too much in December (because hubby was home more), January would turn into a pantry challenge, and when February rolled around I had the momentum to eat healthy and fill our fridge/freezer back up with items we actually enjoy eating.

Fill Your Freezer February!
Happy February! It’s a New Month which means a new challenge (read the beginning post HERE)! I decided this month is Fill Your Freezer February partly because the Holidays took over my normal kitchen/food routine, but also like a lot of people, I need to be better at our grocery spending. You can do this anyway you like – a pantry challenge, freezer cooking sessions, frugal food menu, but here’s my plan:

I feel I’ve made a bunch of snacks for Fill Your Freezer February, but I know wants this snow and cold snap breaks my kids will be back to playing outside and enjoying our nature walks. In return that means they’re always hungry!

I got a happy surprise yesterday while making enchiladas for dinner tonight!
I was able to make a few extra enchiladas beyond what was able to fit in my pan; I tucked these extras into a freezer gallon bag, labeled them burritos and added to the freezer!
